4 or 5 apples (McIntosh or Winesap) 3/4 cup sugar 5 teaspoons cinnamon 4 eggs 1-1/2 cups sugar 1/2 cup orange juice 1 cup oil |
1/2 cup chopped nuts (optional) 8 cherries, quartered and a little juice 3 cups flour 3 teaspoons baking soda 3 teaspoons vanilla confectioners' sugar |

| Preheat oven to 325 degrees. Peel apples and slice thin. Put apples in separate bowl and sprinkle with a mixture of 3/4 cups sugar and 5 teaspoons cinnamon. Let apples marinate. Mix together remaining dry ingredients. Mix together liquid ingredients. Combine dry and liquid ingredients then fold in quartered cherries and nuts. Grease and flour tube pan. Pour half of the batter in the bottom of prepared pan. Add half of the marinated apples. Add remaining half of batter. Top with other half of apples. Bake at 325 degrees for 1 hour. Let cake sit then remove from pan. Let cake cool and then sprinkle with confectioners' sugar. |
