Ingredients:
3 cups all purpose flour
1/4 teaspoons salt
3/4 teaspoon baking soda
2 teaspoons ground ginger
1 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
1/4 teaspoon ground cloves
1/2 cup unsalted butter, room temperature
1/2 cup granulated white sugar
1 large egg
2/3 cup unsulphured molasses
Note: To prevent the molasses from sticking to the measuring cup, first spray the cup with a non stick vegetable spray (like Pam).

Cooking Instructions:
To Make the Royal Icing:



In the bowl of your electric mixer, with the whisk attachment, place the meringue powder confectioners sugar, and water. Beat at low speed until the sugar is moistened. Increase the speed to high and beat for about 5 to 7 minutes or until very glossy and stiff peaks form. Beat in the orange extract, if using. Add more water or sugar as necessary to get the right consistency for piping. Transfer to a piping bag and decorate as desired.



Makes about 3 dozen cookies depending on the size of cookie cutter used.



Store in an airtight container for several weeks.







Royal Icing using Meringue Powder:



1 1/2 tablespoons (15 grams) Meringue Powder



2 cups (230 grams) confectioners sugar (powdered or icing)



3 - 4 tablespoons warm water



1/4 teaspoons pure Orange extract (optional)



Makes about 1 1/2 cups



Note: Meringue powder is a fine, white powder used to replace fresh egg whites in royal icing. It contains dried egg whites, sugar, salt, vanillin and gum. When beaten with water and confectioners sugar it has the same consistency as icing made with fresh egg whites. You can purchase Meringue Powder in most cake decorating and party stores (like Michaels). On-line source: Sweet Celebrations (sweetc.com).
